One small server does exactly one job: it helps the two devices find each other when a room is opened, then gets out of the way. It relays the connection-setup messages between the two sides — it does not see your files, and it doesn’t store them. Some strict networks won’t allow two devices to connect directly. When that happens, the traffic has to pass through a relay to get through at all. Even then, the relay only forwards the encrypted stream — it can’t read what’s inside.
